This sieve is an industrial utensil with a woven mesh bottom used to strain or separate finer particles from courser ones, in this case the sieve reduces the ingredient to a finer size. The 85 mesh number is determined by the number of openings per linear square inch. For many people the sieve might be recognised as an implement to pan for gold nuggets.
